Chef Clara Gaehwiler, from Pirenópolis, won the first contest of its kind promoted by the Swiss Tourism in Brazil in partnership with the SerTãoBras association, which sought the winning recipe in Brazil.
The competition occurred on Monday (15) at the Consul General of Switzerland’s residence in Brazil, in São Paulo.
It was a qualifying event for the World Fondue Championship, which will take place on November 18 in Tartegnin, in the Swiss region of Vaud, near the Alps and the Léman Lake. Clara will represent Brazil.

Daughter of a Swiss and a native of Goiás, the chef who already runs the Ursus gastronomic space – specialized in meats, burgers, and cheeses – the Casa do Suíço Empório, and Queijaria Alpina, used a mixture of Swiss and Brazilian cheeses in her winning recipe.
According to the competition rules, it used 50% Gruyère, an exclusively Swiss product, to a combination of its own Alpina cheeses – the Raclette type with 90 days of maturation and the Sephan with 12 months.
According to SerTãoBras, she and other competitors were judged, among other criteria, according to the originality of the recipe.
“We were able to see the good Brazilian cheeses in alliance with the king of Swiss cheeses, consecrating this typical dish that is a symbol of our culture”, commented Fabien Clerc, Swiss Consul in Brazil.
During the closed event, guests attended a presentation on the history of Gruyère with a guided tasting of the different stages of aging.
Clara was evaluated by the president Stéphane Jayet and the general commissioner Débora Pereira, a journalist from the French magazine Profession Fromager and director of the association SerTãoBras, besides Brazilian jurors from the Guilde des Fromagers.
Now “crowned”, she will fly to Switzerland, courtesy of Swiss International Airlines, to dispute the world title with Swiss candidates and other countries like Canada, which also held its national competition in May.
